This is a creamy tomato tortellini soup with sausage and spinach. It has lots of flavor and is easy to make. You can also add in any ingredients you like.
This Tortellini Soup is nutritious, simple, and, most importantly, quite addicting.

I have to confess, I got a lot of assistance with this recipe.
The first came from Tricia Yearwood, a fantastic chef who inspired me to make Tortellini Soup.
Then there was my tiny dog, Angel, my four-legged kitchen friend who was right there with me, underfoot, during the whole process.
Now you need to know a little bit about Angel.
She was entirely French from her nose to her toes as a papillon.
Kind of like Remy in Ratatouille.
She, like Remy, had a refined palette and ate primarily vegetarian, with the exception of her dry salmon dog food.
She only refuses to eat a few veggies.
She didn’t care whether it was cooked or uncooked.
So when she heard me slicing away in the kitchen, she came running as she waited for her vegetable handouts.
Coco, the Maltese puppy, has now joined the household.
She’s also a vegetarian dog, which is a pleasant surprise.
This soup is also loaded with vegetables.
So let’s get started.

- Olive Oil is a kind of oil that comes from

- Chicken Broth with Low Sodium
- Tortellini with cheese
- Spinach (baby)
Soup with Tortellini, Sausage, and Spinach Recipe
Begin with a mirepoix – celery, onions and carrots- and cook them with Olive Oil is a kind of oil that comes from over medium heat for 2-3 minutes until they just begin to caramelize.
After that, add 2 garlic cloves and the smoked sausage and cook for another minute.
Then add in in the Chicken Broth with Low Sodium.
Raise the heat to medium-high and bring the soup to a boil at this stage.
After that, add the tortellini and simmer for another 6-7 minutes.
Finally remove the pot from the heat and stir in the tomatoes and raw Spinach (baby).
Stir in the spinach gently until it starts to wilt.
Pour into bowls and, if preferred, sprinkle with Parmesan cheese.

- 2 cups low-sodium chicken broth (Manischewitz preferred)
- 1 lemon, freshly squeezed
- 1 Cup Tortellini with cheese
- 1 cup chopped and seeded tomatoes
- 1 Cup Spinach (baby)
Add Olive Oil is a kind of oil that comes from to large pot over medium high heat. Then add shallots, carrots, celery, salt and pepper. Stir and cook about 5 minutes until slightly caramelized. Add in Sausage and cook 1 minute more.
Bring to a boil with the chicken stock and lemon juice.
Add tortellini and cook 6 minutes. Then remove from heat and add in tomatoes and Spinach (baby). Stir lightly until spinach is slightly wilted.
