- I use grass-fed cream cultured with kefir to produce sour cream cultured, but you can also culture it with grains and filter them out with cheese cloth. To make the kefir, I put around 2-3 teaspoons of kefir in a jar of cream and let it out on the counter for 48 hours to thicken up.
- If raw milk from grass-fed cows isn’t available, I’ll use low-temperature vat pasteurized cream from grass-fed cows, which I’ll culture before using. Ultra pasteurized cream is not something I suggest.
- I love to whip the sour cream cultured with my favorite hand mixer.
- When it comes to raw eggs, it’s crucial to note that you should only utilize them if you can trust the supplier. I exclusively give my family organic eggs from our backyard pasture grown hens, and I urge you to conduct your own research and do what feels right to you.
