- You may omit the bay leaf, but it is a fantastic addition to this recipe.
- Cornstarch – is used to thicken the stew. Without it, our broth will have a soup-like texture. To thicken the stew, leave out the strict keto and add a pinch of xanthan gum.
- Freshly cut parsley is ideal for garnishing the stew.
- Salt&Pepper – to taste, but make sure with the amount of salt because we are also using beef broth.

- In a big saucepan, heat the olive oil and cook the onion and garlic until soft.

- Combine the beef broth, tomato paste, and bay leaf in a large mixing bowl. Bring the whole mixture to a boil, then reduce to a low heat and cook for 40 minutes.
- If it’s not thick enough, add the cornstarch and continue to cook for another five minutes.
- Remove the bay leaf, top with chopped parsley, and serve immediately!

- Brown the meat in the saute mode before adding the veggies.
